Asian Peanut Noodles with Chicken for #FoodieExtravaganza

For the month of November, I invited everyone to join me in sharing recipes featuring Peanut Butter - did you know November is National Peanut Butter Lover's Month? We go through a fair amount of peanut butter in this house - PB toast, PB&J sandwiches, PB & Banana - those are all the go to flavors that we enjoy regularly. But it's so great for baking and cooking with as well!

Oh my gosh this dish was AMAZING. So flavorful, full of fresh delicious veggies, perfectly tender udon noodles and that luscious flavorful sauce. Peanut butter powder works so great in dishes like this; you don't have to worry about the sticky thick texture of PB in a jar - you just whisk in the powder to your sauce and voila! Amazing flavor without changing the consistency. I have been keeping PB Powder in my pantry for years now - I really like adding a little to protein shakes, and have used it in baked oatmeal before as well. It's full of great flavor, and much less fat than using regular peanut butter so it's a perfect option to have on hand if you love PB flavor as much as we do. 

This recipe is super flexible - change out the noodles, the veggies, the protein, etc. Use what you like best and have on hand - but this combination was really delicious and we will definitely make this one again!

Asian Peanut Noodles with Chicken

Ingredients
2 packages frozen udon noodles (about 2 cups)
2 tsp vegetable oil
1 1/2 lbs boneless skinless chicken breast, diced small
salt and pepper, to taste
1 cup frozen green peas
2 zucchini, diced small
2 carrots, peeled and diced small

Sauce
1 cup vegetable stock
1/4 cup peanut butter powder
2 tsp sweet chili sauce
2 TBS honey
2 TBS soy sauce
1 heaping TBS minced garlic
1 TBS cornstarch

Directions
  1. Bring a pot of water to boil, and prepare noodles per package directions, running under cold water once cooked to stop the cooking process then set aside.
  2. Meanwhile, heat a large nonstick skillet to medium-high heat with about a tsp of oil - a little more if needed. Brown the chicken on all sides and cook until it is fully cooked through, season the chicken with salt and pepper while cooking.
  3. Remove the cooked chicken to a bowl, and add another tsp of oil to the skillet. Add in the diced zucchini and carrots, and sauté for about 5-8 minutes, stirring occasionally, until lightly browned and cooked to your preferred tenderness. Season with salt and pepper while cooking.
  4. Meanwhile, in a medium bowl, combine all sauce ingredients and whisk to blend.
  5. When vegetables are cooked, add the chicken back into the pan and pour the sauce over, adding in the frozen green peas as well. Increase the heat and stir until sauce comes to a simmer and thickens up.
  6. Turn the heat off and gently stir in the cooked noodles. Serve immediately. Sprinkle chopped or crushed peanuts over the top if desired.

  5. I've been wondering about peanut butter powder and whether it's worth the purchase. I was thinking more of baking with it but now I see it would be great as a "seasoning" and/or sauce ingredient as well!
