Instant Pot Mississippi Mud Chicken


If you love the flavor profile of Mississippi mud pot roast you will love this chicken version too! It's so packed full of delicious flavors and completely versatile too. Pile this on rolls for sandwiches, serve spooned over mashed potatoes or rice with that deliciously tangy sauce. Serve over baked potatoes - take your pick!

Instant Pot Mississippi Mud Chicken

Ingredients
3 lbs boneless skinless chicken breast, cut into about 4-5 oz pieces
1/2 cup water
8-oz jarred pepperoncinis (with juice) (whole or sliced)
1 (1-oz) packet Au Jus or Brown Gravy Mix
1 (1-oz) packet Ranch Dressing/Seasoning Mix
4 TBS (1/2 stick) butter

Directions
  1. Place chicken pieces in the bottom of your instant pot. Add in the water, pepperoncinis with juice, au jus mix, and ranch dressing mix. Give it a stir to get the powder into the liquid. Place the butter on top. 
  2. Place the lid on and seal, set for 10-minutes.
  3. Allow to naturally release for 5 minutes. 
  4. Chicken should be fork tender. Shred chicken into the gravy and serve over mashed potatoes or rice, if desired.
