These cookies are SOOOO good - if you like the coffee / chocolate combination you will definitely have to give these a try! I really like the instant espresso from Café Bustelo - it works perfectly in baked goods like these! 

These cookies have a wonderful buttery flavor - lightly crisped edges, wonderful tender bites of chocolate, soft and chewy cookies. They are perfection - and they are the perfect treat to enjoy with some coffee at the end of the day. Santa would totally love a few of these with some coffee on Christmas Eve!

Mocha Chocolate Chunk Cookies

Ingredients
3/4 cup butter, softened
1 cup sugar
1 egg
2 teaspoons Adams vanilla
1 3/4 cups flour
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon instant espresso powder or instant coffee
1/2 cup semi-sweet chocolate chunks

Directions
  1. Cream the butter with the sugar in the bowl of a stand mixer until lightened and fluffy - for a couple minutes. Blend the egg in and then the Adams vanilla. Scrape down the sides as needed.
  2. Combine the dry ingredients in a medium bowl: flour, cocoa powder, baking soda, salt, and espresso. Whisk to combine.
  3. Add the dry ingredients into the wet and mix until dough comes together. Stir the chocolate chips in with a spatula.
  4. Refrigerate for 30 minutes (or more) before proceeding to allow dough to chill.
  5. Preheat oven to 350 degrees and line two baking sheets with silpats.
  6. Use a 1 1/2 TBS cookie scoop to arrange 12 dough balls per cookie sheet.
  7. Bake 8-10 minutes per tray, until edges are starting to brown and look set. Allow to cool on the baking sheet about 3-5 minutes, before moving from tray to cooling rack to complete cooling.
  8. Repeat with remaining dough, chilling extra dough in the refrigerator between batches.
