Molten Chocolate Lava Cake for Two
I have had molten lava cakes on my "to try at home" list for so long! And I'm so glad we finally gave them a try.
My baby baker is also pretty thrilled we gave them a try! She's actually pretty dang picky about everything she eats - including baked goods / sweets, and she really loved these little chocolatey cakes.
A couple pieces of fresh fruit is really helpful to cut through the decadent richness of the chocolate. That molten center is just amazing. And the texture of the brownie-esque cake surrounding the center works beautifully. These are perfect. And I adore the serving size of two little cakes! Perfect for treats like this which need to be served and enjoyed right away!
Molten Chocolate Lava Cake for Two
Ingredients
1/4 cup butter
2-oz semi-sweet chocolate (I used Baker's)
1/2 cup sifted powdered sugar
1 large egg
1 egg yolk
1/2 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon instant espresso powder
Directions
- Preheat the oven to 425 degrees and spray 2 6-ounce ramekins with nonstick cooking spray. Set them on a baking sheet.
- Add the butter and chocolate to a small saucepan, and over low heat combine with a spatula, stirring constantly until melted and blended together. Remove from heat.
- Whisk the powdered sugar into the chocolate mixture, followed by the egg, egg yolk, and vanilla blending thoroughly.
- Being careful not to over mix the batter, blend in the flour and espresso powder.
- Divide the batter between the prepared ramekins, and bake in the preheated oven 12-14 minutes until the edges are firm, and center is still soft. Allow to sit for a minute or two before inverting and serving immediately.
- Garnish with a little sprinkling of powdered sugar and / or a couple pieces of fresh strawberry or raspberry to serve if desired.
