Herbed Cucumber and Tomato Salad
If you happen to have some summer bounty in the way of cucumber and tomatoes - this is such a light, refreshing, and easy salad to toss together. It goes alongside just about anything! Perfect with sandwiches (hot or cold), grilled chicken, burgers, etc.
Tweak the seasonings however you'd like to your personal preference - use pretty much whatever flavor profile you'd like. The white wine vinegar adds a nice touch of "zing" while the seasonings you choose will add that touch of herbiness, without taking away from the light refreshing vegetables.
Herbed Cucumber and Tomato Salad
Ingredients
2 large cucumbers, cut into bite-sized chunks
2-3 medium tomatoes, cut into bite-sized chunks
2 Tablespoon extra virgin olive oil
2 Tablespoon white wine vinegar
1 teaspoon dried basil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
- Whisk the olive oil, vinegar, and seasonings together in the bottom of a large bowl. Add in the prepped vegetables and toss mixture to combine.
- Taste test, adjust the seasonings as needed to your personal preference.
- Refrigerate until ready to serve (it will make more liquid as it sits, drain this off and adjust seasonings again before serving if desired).
