Fruit and Goat Cheese Salad
I love, love, love salads. They are the most wonderful base to "play" with. Mix and match your favorite ingredients, and each person can customize their plate as well which is always convenient.
This salad definitely was inspired by some ingredients that were in need of a purpose - and it was absolutely a delicious combination! I adore goat cheese in salads - that creamy tangy bite blended with the other sweet, crisp, crunchy, and chewy ingredients. It just blends together so well. Dried cranberries would work great in place of cherries in this recipe, and pretty much any of your favorite apple variety would work well.
Almost any vinaigrette would be perfect - I opted to use one I already had on hand which was a red wine vinaigrette, and the tangy flavor profile was a lovely contrast. A raspberry or strawberry vinaigrette would have been amazing with this as well!
Fruit and Goat Cheese Salad
Makes 2 salads
Ingredients
8 cups of romaine, chopped and rinsed
4-oz cooked, shredded chicken
2-3 oz goat cheese, crumbled
1/4 cup dried cherries
1 Fuji apple, diced
optional: 2 slices of bacon, crumbled
1/2 - 3/4 cup croutons
Red Wine Vinaigrette
Directions
- Divide salad ingredients between two plates and top with desired amount of dressing.
- Enjoy!
