Weekly Meal Plan ~ 9/28/20

We have made it to the very end of September - and the beginning of October! The time continues to fly by... we're reaching the tail end of summer and I'm sad about it. No more 4 times a week trips to the pool after school, less hikes and backyard time, the end of our first garden... but fall things are coming too. More soups and stews, fires, sweatshirts and fuzzy socks, decorating for Halloween, thinking about menus for all the upcoming Holidays, and thinking about how those Holidays might look this year. So much change!
This next week there is a lot of baking that will be happening in my kitchen in preparation for a couple upcoming events, including #Choctoberfest - stay tuned for some decadently yummy treats heading your way!

Lao Grilled Chicken and Sticky Rice with roasted brussel sprouts
Tuesday 9/29
Fish Po' Boy Sandwiches with chips and raw veggies
Wednesday 9/30
Shrimp, Okra, and Rice Stew

Impossible Burgers with Caramelized Onions, Sauteed Mushrooms and Swiss Cheese
Friday 10/2
Instant Pot Swedish Meatballs and pasta with steamed broccoli
