Buttery Chocolate Chip Cookies


I am not sure how many variations of chocolate chip cookie recipes I'm up to testing, but here is one more! This one was really delicious - we all gave this one two thumbs up. It's crisped on the edges, super buttery, and has the perfect chewy center. 10 out of 10, would recommend!


This was a baking project with my Baby Baker recently - she wanted to make a batch of cookies so we opted for chocolate chip. It's been a little while since we made cookies - I feel like I've been making a lot of muffins and cakes the past couple months so it was a nice change of pace. And MAN did these disappear fast! Everyone really enjoyed them!

They bake up very pale at the suggested baking time, but as long as the edges are browning they're ready. Mine continued to brown even out of the oven - I think because they're so thin, that radiant heat from the pan continues baking them, so don't be too concerned if the center of your cookie looks a little pale when you pull it out, if it's anything like the batch I made they'll be the perfect golden brown once they've cooled and set a little!


Buttery Chocolate Chip Cookies

Ingredients
1 cup salted butter, softened
1 cup white (granulated) sugar
1 cup light brown sugar packed
2 tsp pure vanilla extract
2 large eggs
3 cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp salt
1 - 2 cups chocolate chips (or chunks, or chopped chocolate)

Directions

  1. Preheat oven to 375 degrees, and line 2 baking sheets with silpats or parchment paper.
  2. In the bowl of a stand mixer, cream the softened butter with the sugars until light and creamy (a minute or two).
  3. Add in the eggs, one at a time, scraping down the sides as needed. Add in the vanilla and blend.
  4. In a separate medium bowl combine the dry ingredients: flour, baking soda, baking powder, and salt. Whisk together until combined. 
  5. Slowly add the dry ingredients into the sugar mixture on low speed until just combined. Finish blending everything with a spatula by hand and gently stir in your preferred amount of chocolate chips.
