Mini Meatloaves



I bought this mini loaf pan not too long ago and it is the best pan for little personal sized meatloaves! I love the individual portions, and how each you get that caramelized edge around each. They cook much quicker than a full sized meatloaf which is a huge bonus, and you don't run the risk of having a dry meatloaf because it has to cook so long to ensure it's done all the way through.

In addition to all of those fun bonuses when you make mini loaves - this is just a delicious recipe!! I love the sweet sticky sauce that coats each little meatloaf! We will definitely be making these again, it's quick, easy, and a terrific meatloaf recipe to keep on hand for some classic comfort food.


Mini Meatloaves

Ingredients
1 egg
3/4 cup milk
1 cup shredded Cheddar cheese
 1/2 cup oats (I used old fashioned, quick work well too)
1 teaspoon salt
1 pound ground beef

Topping
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 teaspoons prepared yellow mustard

Directions
  1. Preheat oven to 350 degrees. In a large bowl, combine the egg, milk, cheddar cheese, oats, and salt. Blend in the ground beef. 
  2. Divide mixture between a mini loaf pan
  3. In a small bowl, combine the topping ingredients and divide over the tops of the mini meat loaves.
  4. Bake uncovered in the preheated oven for 40-45 minutes, until cooked all the way through.
