Strawberry Salad with Chicken and Poppy Seed Dressing


If you're looking for an impressive summery salad - look no further than this gorgeous recipe. The combination of juicy sweet strawberries, grilled chicken, crunchy almonds, and fresh crisp greens just can't be beat. Then you top it with that gorgeous strawberry vinaigrette? It's amazing!


This is a fantastic salad to serve up on a huge platter and let everyone use tongs to serve up their preferred amount. It looks just beautiful as the center piece to your summery dinner table. You can use chicken cooked up however you'd like - and it can be warm or cool - there's plenty of flexibility with the protein. I think salmon or shrimp would work really well with this salad as an alternative!



Strawberry Salad with Chicken and Poppy Seed Dressing
Makes 3-4 salads

Dressing Ingredients
1/2 tablespoon poppy seeds, toasted
1/2 cup strawberries, tops removed and chopped
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar, or white balsamic
1 teaspoon granulated sugar
salt and pepper
1/2 cup vegetable oil

Salad Ingredients
1/4 cup toasted sliced almonds
8 cups red leaf lettuce, torn combined with field greens
2 cups strawberries, cleaned with tops removed, halved
1 chicken breast, roasted, grilled, or poached, chopped
2 ounces feta cheese, crumbled
1/2 teaspoon poppy seeds

Directions
  1. Combine all dressing ingredients in a sealable / shakeable container (like a mason jar), or in a bowl. Whisk to combine until creamy, if in a bowl, shake until well combined and creamy if in a sealable container. Store in the refrigerator until ready to use.
  2. Assemble salads: divide greens among plates, then divide the prepared strawberries, toasted almonds, crumbled feta, sliced / chopped chicken, and a sprinkle of poppy seeds.
  3. Drizzle with desired amount of dressing and serve immediately!
