Microwave Chocolate Fudge Mix (in a Quart Jar)


This is an easy peasy kid friendly fudge recipe! My sister-in-law sent us the cute "Mixes in Jars for Kids" book by Jackie Gannaway and my baby baker was very excited to browse through it and find something to try out.


Being the chocoholic that she is, it didn't take her very long to settle on this quick and easy fudge recipe. The beauty of this recipe is that it's the perfect "gift in a jar" idea, as well as a fun and easy recipe to make with your littles.

We left the nuts out since there aren't really any fans in my house - and this was an easy, creamy, intensely CHOCOLATE bite of fudge that is soft; so store any leftovers in the refrigerator! And be sure to share - it makes a big pan!


Microwave Chocolate Fudge Mix (in a Quart Jar)

Ingredients
12-oz chocolate chips (about 2 cups)
3 cups mini marshmallows
1 stick of butter (1/2 cup)
3 cups granulated sugar
1 5-oz can evaporated milk
Optional: 1/2 cup chopped nuts (such as pecans)

Directions
  1. In a Quart Jar layer the chopped nuts (if including), chocolate chips, and the mini marshmallows if you'd like to use this as a gift. Then include the instructions below attached to a tag around the jar.
  2. Spray a 9x13 baking dish with nonstick cooking spray and set aside.
  3. Pour the jar contents into a very large bowl.
  4. Cut the stick of butter into about 6 pieces and add to the bowl with the chocolate chips and marshmallows.
  5. In a large, microwave safe, bowl - add 3 cups of sugar and 5-ounces of evaporated milk. Stir to combine. Wrap with plastic wrap, with a small corner turned back to vent.
  6. Microwave on high heat for 4 minutes, stir well, recover, and continue microwaving a minute at a time until mixture comes to a boil (about 2-4 minutes). 
  7. When it comes to a boil, allow it to boil for at least 1 minute (this is to ensure the sugar has time and heat to fully dissolve, if you don't boil long enough the mixture can be grainy once it's cooled and set).
  8. Use a hot pad to remove the bowl from the microwave and carefully pour the hot liquid over the bowl with the chocolate chips and marshmallows. Stir quickly for about 2 minutes until mixture has fully melted and blended together. 
  9. Spread fudge mixture into the 9x13 pan to cool and set up in the refrigerator for about 4 hours until firm. Cut into small squares once set - store in the refrigerator.
