Weekly Meal Plan ~ Week of 5/4/20

I cannot believe it's already Sunday evening!! This weekend just vanished. I blinked and it was gone... my sister and I spent some time yesterday looking at the meal plan and trying to figure out how to make sure all of my blog assignments get done far enough in advance, but that we used up what's in the fridge as well - we still have a few odds and ends ingredients to use up, and a refrigerator full of leftovers at the moment! We've been eating on leftovers for lunches and cooking for dinner.

We recently roasted up a huge 10lb pork butt roast - half for shredded BBQ, and half of it with onions and apples alongside roasted veggies and we'll definitely be enjoying the rest of that for lunches in the coming week! May is a busy month with blog assignments - but so many fun projects!! Burger Month and BBQ Week are both coming up, so definitely check back for some delicious dishes for those events!
