Easy Greek Salad ~ #OurFamilyTable

This week it's all about the Scrumptious Salads! Christie from A Kitchen Hoor's Adventures said "May is Salad Month so let's get on board with late spring and early summer produce.  Share your favorite recipes for a side salad, hearty dinner salad, or even a breakfast salad."


I adore, ADORE, Greek Salads. I've gotten super hooked on them thanks to lunch deliveries from a local restaurant near work called Mediterranean Grill that makes THE BEST Greek Salads. Perfect ratios of fresh vegetables, and gorgeous flavorful grilled chicken. Yummmm... I miss those!

I decided to make an easy Greek Salad to share for today that has a delicious homemade vinaigrette that works beautifully on this pile of fresh veggies. Mix and match the vegetables to your preference (I am not a fan of raw bell pepper and onion, but those would both work great in this if you enjoy them!) I added in an avocado because I had one and love avocado in salads - but of course omit if you don't enjoy them! Salads are so flexible. The key is the dressing - and this one has a lovely balance of flavors. I thought it was just perfect.

Since this doesn't include meat, you can use it as a side salad, a meatless entree, or grill up some tasty shrimp or chicken and have a salad with protein! You could double the recipe for the vinaigrette and marinate some chicken or shrimp in that before cooking - I am sure that would be fantastic!

Scrumptious Salads


Easy Greek Salad adapted from Love and Lemons

Dressing
¼ cup extra-virgin olive oil
3 TBS red wine vinegar
1 TBS minced garlic (jarred)
½ tsp dried oregano
¼ tsp Dijon mustard
¼ tsp salt
Freshly ground black pepper

For the salad
6 cups chopped romaine, washed and dried
1 cucumber, diced
1 medium avocado, diced
1-2 medium tomatoes, diced
1/4 cup crumbled feta cheese
⅓ cup pitted Kalamata olives, sliced in half

Directions
  1. Combine all dressing ingredients in a sealable container (or mason jar works well). Shake to combine and emulsify, or whisk vigorously until ingredients come together. Taste and adjust the seasonings as needed.
  2. Arrange the salad ingredients on 3-4 plates, and drizzle with dressing to taste.
  3. Enjoy!
