Tuscan Style Turkey Soup for #SoupSaturdaySwappers


Colleen of Faith, Hope, Love, Luck Survive Despite a Whiskered Accomplice invited us to make soups using fresh vegetables!

I had some leftover turkey and we almost always have a variety of fresh veggies to pick from in the refrigerator - though it's been a little more hit or miss lately with grocery pick ups. I still usually have my staples - carrots, celery, lettuce, tomatoes, etc. and I had a big container of spinach when I was thinking about what to make for this recipe. It all came together quickly and easily and was chock full of delicious tender veggies and flavorful broth. Perfect for a light meal, or add some crusty bread or rolls to sop up all that yummy broth for a little bit of a more filling lunch or dinner.

Tuscan Style Turkey Soup adapted from Kitchen Sanctuary

Ingredients
1 TBS olive oil
1 medium onion, peeled and diced
1 TBS minced garlic (jarred)
½ tsp dried thyme
1 large stalk celery, diced
2 medium carrots, peeled and diced
2 medium potatoes, peeled and diced
4-5 cups homemade chicken stock
½ tsp salt
½ tsp black pepper
2 cups chopped cooked turkey meat
8-oz fresh baby spinach
1 15-oz can beans, drained and rinsed (I used pinto)

Directions
  1. Heat oil in a large soup pot over medium to medium-high heat and saute the onion for about 8 minutes, until it is tender and begins to caramelize. Add in the garlic and saute another minute. Add in all remaining ingredients, except the beans and spinach, bring to a low simmer.
  2. Cover and simmer about 20 minutes, add in the spinach and return to simmer until spinach has reduced in size (about 5-10 minutes). Add in the beans.
  3. Taste and adjust seasonings as desired.

  4. YUM! I've been relying on spinach lately. I can buy a huge plastic box of it and it will last for several weeks in the fridge. If I don't get around to using it in a recipe or two, we just sauté it down for a side at some point. This soup looks like a pretty good way to use some of my next batch!
