  • It's time for grilling, beautiful salads, fresh fruits, lots of fresh corn - cook out season is upon us! We wanted to inspire you with ideas for your next event. Whether it's just you and a gorgeous steak, or a family affair with tables overflowing with food. 

    If you're looking at side salad options, this one is absolutely wonderful and so unique! It combines a traditional pasta salad, with a green salad, with all the wonderful flavors of a BLT. It was really delicious. I actually made a double batch of the ingredient list below and my little family of 4 devoured the whole thing in a day. Leftovers won't keep long - but they'll probably be fine for a day. Mine didn't make it that long! Just keep the croutons out, and add them on individually so they don't get too soft. Wonderful textures, flavors, and so much fresh goodness in this dish! 

    As always - if you're worried about a salad / side dish getting warm if it's sitting outside, set it atop a larger bowl full of ice underneath it to help keep it chilled / temperature safe!


    BLT Pasta Salad from Veronika's Kitchen

    Ingredients
    4 cups Romaine lettuce chopped, washed, and dried
    2 cups pasta cooked and cooled (I used mini penne)
    2 small tomatoes, diced
    8 thin slices of bacon, cooked to crispy, cooled and rough chopped
    1 avocado, diced
    1/4 cup Parmesan cheese grated
    1-2 cups croutons (I used homemade Ranch seasoned oyster crackers)
    1/4 cup Caesar dressing

    Directions
    1. In a large mixing bowl, combine prepared lettuce with the cooled pasta, diced tomatoes, chopped bacon, avocado, and shredded Parmesan cheese. Toss lightly to combine.
    2. Drizzle the dressing over, and toss lightly to combine again. Taste and adjust cheese and dressing if desired.
    3. Plate and sprinkle with desired amount of croutons to serve.

    6. I love the sound of this pasta salad. I also love the addition of the ranch crackers on top- yum! We make those a lot and it sounds great on a salad!
