This is a lovely, hearty bread that is great with some butter and jam at breakfast time. It has a rich nutty flavor with the combination of whole wheat and oats. It is on the dense side but has a very tender consistency. 

This is a very easy bread to whip up - it has several long rises but is very hands off! It's perfect for a day you're looking for something hearty without too much effort involved.

It made a great addition to a strata casserole I put together later the week I made it - toast up some bread cubes and you have an very flavorful addition to any bread-based casserole, or make some really tasty croutons with any leftovers!

Crusty No-Knead Oatmeal Bread

Ingredients
1 1/2 cups warm water
2 Tablespoons maple syrup
1 Tablespoon olive oil
1 teaspoon instant yeast 
1 cup all-purpose flour
1 1/2 cups whole wheat flour
1 cup oats
1/2 Tablespoon salt

Directions
  1. Combine all ingredients in a medium sized bowl and stir until combined - dough will be fairly sticky.
  2. Cover with a kitchen towel and set aside in a warm place to rest for about 2 hours, until doubled in size.
  3. Stir the dough gently form into a loaf. Spray a 9x5 loaf pan with nonstick baking spray and arrange the dough in the pan.
  4. Cover and again set aside for another 1 - 2 hours, until it has risen to about 50% of its original size.
  5. Optional: sprinkle a handful of oats over the top.
  6. Preheat oven to 400 degrees.
  7. Bake for about 40 minutes, or until well browned on top and sounds slightly hollow when tapped. 
  8. Allow bread to cool almost completely before slicing and serving.
