Caramel Cashew Cookies for #ChristmasCookies

This is a wonderful cookie that's sure to please pretty much anyone who enjoys oatmeal cookies! It takes a basic chocolate chip oatmeal cookie and adds the flavors of toffee and bits of roasted cashews for extra texture and flavor. They are crisped around the edges and wonderfully chewy throughout. And ooh are the gooey ones straight out of the oven the BEST!

Caramel Cashew Cookies
Makes 24 - 28 cookies

Ingredients
1/2 cup (1 stick) butter, softened
1 cup light-brown sugar (packed)
1 large eggs
1 tsp Adam's Vanilla Extract
1 1/4 cups whole oats
1 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup toffee bits
1/2 cup dark chocolate chips
3/4 cup salted cashew halves, chopped into small pieces

Directions
  1. Preheat the oven to 375 degrees. 
  2. In the bowl of a stand mixer, whip the softened butter with the brown sugar until creamy and lightened in color (a minute or two). Blend in the egg, scraping down the sides, until well incorporated and mixture looks fluffy. Blend in the egg.
  3. In a medium bowl, combine the dry ingredients: flour, baking powder, baking soda, and salt. Whisk to combine.
  4. Add dry ingredients into the creamed mixture and blend slowly, just until combined, scraping down the sides and bottom.
  5. Add in all remaining add-ins: oats, toffee bits, chocolate chips, and cashew pieces. Blend slowly again, just until combined. Use a spatula to scrape down sides and bottoms and finish blending gently by hand.
  6. Use a 1 1/2 TBS scoop to place 12 cookie balls on your cookie baking sheet.
  7. Bake in the pre-heated oven about 9 minutes, until bottoms are golden brown. Allow to cool on cookie sheet 3-5 minutes, until cookie firms up enough to easily move them to a cooling rack.
  8. Repeat with remaining cookie dough.
  9. You can keep the cookie dough in the refrigerator between batches, to help keep the cookies from spreading if desired, but I didn't find that these cookies spread that much.
