Classic Chocolate Chip Cookies

Hubby asked for cookies and ice cream last night, and we could have used the last two Chewy Chips Ahoy but I thought HEY this gives me a "valid" excuse to do some baking tonight! And off I went! I went to my AllRecipes.com recipe box folder and looked through my chocolate chip cookie recipes and went for the top rated one. It is called "Three Hundred Chocolate Chip Cookies" because the recipe is literally scaled for THREE HUNDRED cookies!! I scaled it to 12 and still got 27 good sized fantastic cookies out of that!

These came out soft, chewy and soft in the middle and are just the way we like a cookie. The flavor is really good - very classic chocolate chip cookie and I used a mix of white, semi-sweet and milk chocolate chips and think that gave it a nice something "extra" in the flavors. (I was just trying to use up some of the various open bags I already had in my freezer, but it worked out well!) The only other thing I changed is that I used a combo of Splenda/Stevia instead of white sugar; everything else I followed per the instructions. You can find the original recipe here.

I started with all my ingredients layed out on the counter (Splenda, brown sugar, butter, eggs, vanilla extract, baking soda, flour, salt, chocolate chips)

I measured out the white and brown sugars.

 And added those to the butter in the mixer bowl.


 I turned the mixer on to medium and let it make a beautiful buttery sugary mixture of goodness!

 After the butter and sugars were well combined it was time for the wet ingredients!


 In went the eggs and the vanilla extract.

Those were mixed in completely before moving onto the dry ingredients.

 The baking soda and flour were added to the medium mixing bowl.

 Followed by the salt.


 I slowly added the dry mixture to the batter until it was completely combined.





 Next came the yummy mixture of milk chocolate, semi-sweet and white chocolate chips!



I rolled the dough into about 27 walnut sized balls and baked for 10 minutes at 375 degrees. I immediately moved them from the hot cookie sheets to cooling racks when they came out of the oven.




They look like inviting little nuggets of sweet chocolatey goodness, and that's exactly what they taste like! The dough itself has a very nice brown sugar flavor to it, and then add lots and lots of warm meltey chocolatey goodness to complement it. In otherwords, this is a happy sugar coma waiting to happen. Kenneth has said I haevn't been batting very high when it comes to trying out new dessert recipes out lately, but he gave 2+ thumbs up for this one and thoroughly enjoyed a couple warm cookies with some cool vanilla bean ice cream (and then maybe one or two more after...!) :)

Ingredients

1 cup white sugar (or Splenda/Stevia)
1 cup packed brown sugar
2/3 cup butter
2 eggs
1-1/4 teaspoons vanilla extract
1 teaspoon baking soda
2-3/4 cups all-purpose flour
1/4 teaspoon salt
12 ounces semisweet chocolate chips (or a combination of different types of chocolate chips)
 
Directions
Preheat oven to 375 degrees F.

In a large bowl, cream sugars and butter. Add eggs and vanilla. In a separate mixing bowl, combine dry ingredients and add gradually to creamed mixture. Stir in chocolate chips.

Shape into approximately 27 large walnut sized balls, leaving a little space between each cookie for expansion. Bake for 10 minutes or until they start to brown, remove from cookie sheets and allow to set on a cooling rack.

  1. I made these same cookies and mine were FLAT! I used sugar (I didn't have anything else) maybe that's why, they were still yummy!
