Savory Cheesy Herb Waffles for #SundayFunday

Sneha from Sneha's Recipes invited us to join her in making and sharing waffles today - sweet or savory! We love waffles but don't make them all that often - maybe only once or twice a year. Pancakes tend to win out when we make something in that family, probably just for convenience! But I have fond memories of filling every little tiny well of a waffle with a tiny bit of syrup and it's always a special treat when we whip up a batch. 


So today I opted for a savory recipe, to branch out a little. I wasn't quite sure what we'd serve them with, but after making and tasting them I could think of a bunch of ideas. This recipe would be FABULOUS with some fried chicken tenders and a drizzle of maple syrup, they'd make a great "wafflewich", and they are indeed delicious with just a fried egg on top.

Keep them crispy in the oven, or enjoy immediately as they do get soft pretty quickly. The flavor of the cornmeal is a fantastic addition to these waffles! I kept it pretty simple - but you could definitely amp up the herb component and mix and match depending on what flavor profile you wanted. Some crushed rosemary, chopped fresh parsley, etc. pretty much anything will work in this lovely base.

Savory Cheesy Herb Waffles

Ingredients
2 cups flour
1/2 cup cornmeal
1/4 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
2 cups buttermilk
2 eggs
4 Tablespoons butter, ,melted
3/4 cup cheddar, shredded
2 tsp dried chives
1/2 teaspoon onion powder
(optional) fried eggs to serve

Directions
  1. Heat a waffle iron to high heat. In a medium bowl, whisk together the buttermilk and eggs and set aside.
  2. In a large bowl whisk together dry ingredients: flour, cornmeal, cornstarch, baking powder, salt, and black pepper. Whisk the buttermilk and egg mixture into the dry ingredients. Stream the melted butter in and whisk.
  3. Lastly whisk in: shredded cheddar, chives, and onion powder. Batter should be fairly thick and a little lumpy is ok.
  4. Spray waffle iron with nonstick cooking spray and cook waffles per your waffle iron's instructions.
  5. Keep them warm on a cookie sheet in a 200 degree oven, or serve immediately (they won't stay crispy too long after they are initially cooked).
