Garlic Grilled Flank Steak Tacos


I had a cut of flank steak and some of those adorable street sized tortillas in my refrigerator and this dinner came together easily and was just delicious! 


Look at all that garlicky goodness! It was pretty much impossible not to taste test my fair share of steak slices while prepping the tacos!


You can mix and match the toppings however you prefer - and definitely be sure to slice that gorgeous steak very thinly against the grain. The majority of the time involved in this recipe is hands off while the meat marinades which is crucial to infuse all that wonderful flavor. 


Garlic Grilled Flank Steak Tacos

Ingredients
1 lb flank steak
1 tsp salt
1 tsp pepper
1/4 cup olive oil
1 tsp Italian seasoning
2 TBS diced garlic (minced)
1/4 cup lemon juice
1/2 TBS garlic powder

For the tacos
street sized tortillas
2 cups shredded cabbage 
1 TBS lime juice
1/2 tsp salt
cotija cheese
diced tomatoes
diced avocados

Directions
  1. Combine steak in a ziploc bag or resealable container with all remaining marinade ingredients: salt, pepper, olive oil, Italian seasoning, minced garlic, lemon juice, and garlic powder). Allow to rest in the refrigerator at least 4 hours, or overnight.
  2. Preheat a grill to high heat when ready to cook the steak. Be sure to spray with nonstick cooking spray or rub with oil before turning the heat on.
  3. Cook about 4-5 minutes per side, until cooked to medium rare, then rest about 10 minutes before slicing.
  4. Arrange several slices of steak along with desired toppings on small street sized tortillas (warm them gently prior to filling).
  5. Serve and enjoy!
