Apple Berry Cobbler
This was a wonderful, quick, easy and superbly comforting dessert we enjoyed recently. Serve this warm with a scoop of vanilla ice cream for a bowl of cozy.
The dish comes together quickly and easily and allows you to mix and match apples and berries - you can change up the berry mixture depending on what you have available or prefer to use!
The topping is a lovely, tender, lightly sweetened mixture. If you like the texture of "crunch" add a sprinkling of turbinado sugar over the topping before baking.
Apple Berry Cobbler
Ingredients
2 cups mixed berries (frozen)
1 cup apples, cored, peeled and diced (about 2 small)
1/2 cup sugar
1 teaspoon cinnamon
2 TBS all-purpose flour
Cobbler Topping
1/4 cup butter, softened
1/3 cup sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
Directions
- Preheat oven to 375 degrees. Spray a 9x13 baking dish with nonstick cooking spray and set aside.
- Toss the berries, sliced apples, flour, cinnamon, and sugar together in a bowl to evenly combine everything then set aside to rest while you prepare the topping.
- In the bowl of a stand mixer, cream the softened butter and the sugar together. In a small bowl, combine the flour, baking powder, and salt and whisk to blend.
- Add the dry ingredients into the creamed butter mixture, along with the milk, whisking on low speed just until combined. Scrape down the sides and bottom as needed.
- Spread the fruit mixture in the prepared baking dish, then dot with the cobbler topping (you don't have to spread it to evenly cover).
- Bake in the preheated oven for 45-50 minutes, until fruit is tender and bubbly, and the cobbler topping has baked through and is golden brown.
- Serve warm with vanilla ice cream or whipped cream if desired.
