Air Fried Butternut Squash

If you like butternut squash and want a quick easy, delicious side that can go with just about everything definitely give this one a try soon!

My sister used some of the leftovers in a breakfast hash the next morning which was a fabulous idea as well.

Air frying cubes of butternut squash seasoned lightly yields these amazingly creamy crisp tender bites that work SO perfectly as a substitute for potatoes alongside a delicious grilled steak!

Air Fried Butternut Squash

1 pound butternut squash, peeled and cut into 1/2-inch pieces
1 Tablespoon extra-virgin olive oil
2 teaspoons bagel seasoning (such as Trader Joe's Everything but the Bagel Sesame Seasoning Blend )
1 teaspoon chopped dried rosemary
1/2 teaspoon salt

  1. Preheat air fryer to 400 degrees.
  2. Place chopped squash with the oil and seasonings in a large bowl and toss gently to evenly coat.
  3. Set the timer for 22 minutes, and check it / toss the squash every 4 minute or so until well browned and cooked through.
  4. Taste and adjust the seasonings as needed and serve immediately!
