This was such a fun and delicious breakfast treat! You can use pretty much any pie filling flavor you'd like - but I think the cherry gives you that fun Christmassy color. It's some combination of dessert and breakfast all rolled together; like a cherry Danish and a croissant casserole got together and made an epic and memorable breakfast!

This did not last long at my house at all - and it would absolutely be a lovely Christmas brunch idea! 

Cherry Croissant Breakfast Bake

Ingredients
8 large croissants, cut into 1" pieces
10 large eggs
1 ½ teaspoons salt
½ cup pure maple syrup 
1 teaspoon pure vanilla extract
1 cup milk
1 21-oz can cherry pie filling (or choose pie filling flavor of your choice)

Directions
  1. Preheat oven to 350 degrees. Spray a 9x13 baking dish with nonstick cooking spray.
  2. Arrange the diced croissants in the baking dish.
  3. In a large bowl, whisk together the eggs, salt, syrup, vanilla, and milk until well combined.
  4. Pour the egg mixture over the croissants in the baking dish and then scoop the pie filling carefully and evenly over the top of the baking dish (it doesn't have to completely cover the surface, just be a fairly even layer).
  5. Bake in the preheated oven 40-50 minutes, until the egg layer is fully set and the tops of the croissants are golden and crisped.
  6. Cool 10-15 minutes before slicing and serving.
