Each month The Cake Slice Bakers are offered a selection of cakes from the current book we are baking through. This year it is Little Everyday Cakes by Candace Floyd. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs. There are a few rules that we follow, but the most important ones are to have fun and enjoy baking & eating cakes!

Peanut Butter Snack Cake

Sour Cream Coffee Cake with Coconut Streusel


This is a wonderful addition for your "snack cake" arsenal. It is chock full of peanut butter flavor, and oh so wonderfully moist and tender. The frosting is a deliciously "PB & Honey" flavored addition and it goes together perfectly. A sprinkling of crushed roasted peanuts would be a terrific touch - one I would have added, had any been left in my pantry! My son has been polishing this cake off methodically; it's definitely been well received in my house. And I hope he finishes it off soon, because in the afternoon I practically hear the leftover pieces calling to me, to be consumed with a glass of milk or a cup of coffee. 


Peanut Butter Snack Cake 

Ingredients
3 TBS creamy peanut butter
3 TBS vegetable oil
1 egg, room temperature
1/2 cup buttermilk, room temperature
1/2 tsp vanilla extract
1 1/4 cups all-purpose flour
1 1/4 tsp baking powder
1/4 tsp baking soda
3/4 cup brown sugar

Directions
  1. Preheat the oven to 350 degrees and spray an 8" square pan with nonstick cooking spray and set aside.
  2. In a small saucepan, combine the peanut butter and oil over medium heat. Stir constantly until peanut butter melts and mixture blends together smoothly. Remove from heat and set aside.
  3. In the bowl of a stand mixer, combine: egg, buttermilk, and vanilla. Combine until blended. In a separate medium bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and brown sugar. Whisk to blend. Add the dry ingredients and the peanut butter mixture into the buttermilk mixture and blend gently, just until combined (don't overmix).
  4. Scrape batter into the prepared baking dish and bake in the preheated oven for 20-25 minutes, or until browned around the edges and a toothpick inserted into the center comes out clean.
  5. Cool and frost if desired.

Peanut Butter Frosting

Ingredients
1/4 cup butter, room temperature
1/4 cup creamy peanut butter
1 TBS honey
1/4 tsp salt
1/2 tsp vanilla extract
1/2 - 3/4 cup powdered sugar, sifted

Directions
  1. Whip the butter and creamy peanut butter together until smooth and well combined, blend in the honey, salt, and vanilla extract until combined. On low speed, blend in the powdered sugar until it is mostly incorporated, and then turn the speed up until smooth and creamy.
  2. Frost cake as desired, once cooled.

  4. I wanted to make this one but I'm the only peanut butter fan in the house. The peanut butter/honey combo is a delicious one and I'd gladly take your leftovers :)
