Greek Salad with Lemon Vinaigrette for #LemonWeek

This recipe is a fabulous starter salad - or add your favorite grilled shrimp, salmon, or chicken for a delicious entree meal! Perfectly summery. Light and crisp and full of fresh veggies. If you happen to have goat cheese instead of feta, it's a delicious sub in salads like this!

Greek Salad with Lemon Vinaigrette
Makes about 4 salads
Ingredients
1 head Romaine lettuce, chopped
2 roma tomatoes, diced
1 cucumber, sliced into half coins
2/3 cup Kalamata olives, pitted
2/3 cup crumbled feta cheese
Vinaigrette
1/4 cup olive oil
1 1/2 TBS freshly-squeezed lemon juice
1 1/2 TBS red wine vinegar
1 tsp minced garlic
1 tsp dried oregano
1/4 tsp sugar
1/4 tsp salt
1/8 tsp black pepper
Directions
- Combine all vinaigrette ingredients in a medium bowl and whisk to combine - or in a mason jar and shake. Whisk / shake until creamy and well combined. Taste and adjust seasonings as necessary.
- Divide salad ingredients between plates and drizzle with dressing.
