1 head Romaine lettuce, chopped
2 roma tomatoes, diced
1 cucumber, sliced into half coins
2/3 cup Kalamata olives, pitted
2/3 cup crumbled feta cheese

Vinaigrette
1/4 cup olive oil
1 1/2 TBS freshly-squeezed lemon juice
1 1/2 TBS red wine vinegar
1 tsp minced garlic
1 tsp dried oregano
1/4 tsp sugar
1/4 tsp salt
1/8 tsp black pepper

Directions
  1. Combine all vinaigrette ingredients in a medium bowl and whisk to combine - or in a mason jar and shake. Whisk / shake until creamy and well combined. Taste and adjust seasonings as necessary.
  2. Divide salad ingredients between plates and drizzle with dressing.
