  • This was a delicious filling sandwich! We thought it could use some mushrooms in the veggie mixture, and it would definitely benefit from a strong cheese flavor, mild kind of gets lost with all that beautiful caramelized onion in there. This is one you can easily play with - if you love caramelized onions as much as we do it's worth trying it out for sure! Add in some ham or bacon if you want a little extra protein in there!


    Ultimate Grilled Cheese Sandwich from Happy Healthy Mama

    Ingredients
    2 large onions, thinly sliced
    salt and pepper
    1–2 tablespoons oil extra virgin olive oil
    1 large tomato, sliced
    sharp cheddar cheese (or preferred cheeses)
    butter
    4 slices whole grain bread

    Directions
    1. Heat olive oil in a large nonstick skillet over medium to medium-high heat. Add the onion slices, and fry for about 10-15 minutes without stirring too often (reduce heat if they are cooking too hot). Once they have good color on them, turn heat down to low and allow them to continue cooking until well caramelized stirring occasionally - another 10 minutes or so (to desired consistency / color). Season the onions with a sprinkling of salt and pepper during cooking.
    2. Once onions are prepared, butter the outside of 4 slices of bread. Layer a slice of cheese on the inside of each piece of bread. Distribute the onions and tomato slices between the two sandwiches. Top with a slice of bread, butter side up.
    3. Cook on a Griddler, or in your nonstick cooking pan over medium heat - until bread is golden brown and cheese is well melted.
    4. Slice in half and serve immediately.
