4/6/20 ~ Weekly Meal Plan
Welcome to another week of family friendly meal ideas for your busy week! Meal planning has become even more essential for us as we're limiting grocery runs and sticking to ordering for pick up or delivery of groceries, and definitely not always finding what we were looking for. So there's always room for flexibility and adjustments each week - and some things slide to later in the week if we have produce that is in need of getting used up quicker. This week I have an eggplant, broccoli, an avocado or two and some zucchini left in the refrigerator in addition to my more "staple" items - lettuce, celery, carrots, tomatoes, and some bell peppers. I think we're down to a little bit of fresh pineapple, 3 peaches, and half a carton of strawberries that need to be used soon for our fruit.
Most of the time we've been eating leftovers during lunch, or occasionally enjoying a frozen pizza or corn dogs just for something different! But we're definitely cooking pretty much every day, and I usually have at least a couple baking projects each week. A loaf of bread and a dessert item seem to be the "norm" right now.
Breakfast tends to be pretty low-key, whatever people are in the mood for. For me it's usually a piece of toast and a fried egg, sometimes it's cereal, a Shakeology shake, fruit and yogurt, or oatmeal, and about once a week or so we're making something like pancakes or french toast.

Lunch: Senegalese Fish & Rice
Dinner: Tuscan Style Chicken Soup

Oh wow, those p.b. pretzel bars!!! I printed that recipe right out. Yum, yum, yum!!!
