Sesame Chicken Salad for #SundayFunday

As with most salad recipes - this is just a great base for you to play with! Add / subtract ingredients depending on what you like best and have on hand. I absolutely loved this bright fresh plate of tasty ingredients together. I am a sucker for mandarin oranges in salads, and love the crunch the chow mein noodles added. The dressing is bright and has a fantastic zing from the apple cider vinegar. You could use rice wine vinegar instead if you prefer the flavor!

This was a great way to get tons of veggies in, and a beautiful platter to enjoy visually as well. Thanks Sneha for the inspiration to enjoy a fresh and tasty meal today!

    Sesame Chicken Salad 
    Makes 2 large salads 

    Ingredients
    4 cups shredded romaine lettuce
    1 cup shredded purple cabbage
    1 can mandarin oranges, drained
    1/2 cup chow mein noodles
    1/4 cup cashews
    1-2 medium carrots, peeled and grated
    1 TBS sesame seeds
    1 large chicken breast, baked / grilled and sliced

    Dressing
    1/4 cup apple cider vinegar
    2 TBS brown sugar
    1 TBS sesame oil
    3 TBS vegetable oil
    2 tsp soy sauce
    1 tsp ground ginger
    1/2 tsp salt
    1/8 tsp black pepper

    Directions
    1. Combine your dressing ingredients in a mason jar and shake until well blended (it will be thin, you can add a little more oil if you'd like a thicker texture, but I didn't mind the thin texture.) Taste, and adjust the seasonings if desired. Set aside / refrigerate until ready to use.
    2. Assemble the salad on individual plates or a large platter - romaine, cabbage, mandarin oranges, cashews, grated carrots. Top with sliced chicken and sprinkle with sesame seeds. 
    3. Drizzle with your preferred amount of dressing (shake the dressing up again before pouring), and enjoy!

    1. It's funny because I was just thinking before today that we hadn't done that in awhile, and bam - we're back on track! :D Honestly I think it just means we need to get together and have a cook out and go diving sometime in the not so distant future. ;)
