Sesame Chicken Salad for #SundayFunday

Welcome to #SundayFunday! Wendy from A Day In The Life on The Farm invited fellow bloggers to kick back, relax, and share something tasty and fun each weekend. "Sunday should be a Family Funday. Please join us in sharing recipes that will help you to enjoy your Sunday." If you're a blogger interested in joining us, just visit our Facebook group and request to join!

Today our #SundayFunday group is hosted by Sneha from Sneha's Recipe who invited us to share some healthy salad recipes!

As with most salad recipes - this is just a great base for you to play with! Add / subtract ingredients depending on what you like best and have on hand. I absolutely loved this bright fresh plate of tasty ingredients together. I am a sucker for mandarin oranges in salads, and love the crunch the chow mein noodles added. The dressing is bright and has a fantastic zing from the apple cider vinegar. You could use rice wine vinegar instead if you prefer the flavor!

This was a great way to get tons of veggies in, and a beautiful platter to enjoy visually as well. Thanks Sneha for the inspiration to enjoy a fresh and tasty meal today!

    Sesame Chicken Salad
    Makes 2 large salads

    4 cups shredded romaine lettuce
    1 cup shredded purple cabbage
    1 can mandarin oranges, drained
    1/2 cup chow mein noodles
    1/4 cup cashews
1-2 medium carrots, peeled and grated
    1 TBS sesame seeds
1 large chicken breast, baked / grilled and sliced

    1/4 cup apple cider vinegar
    2 TBS brown sugar
    1 TBS sesame oil
    3 TBS vegetable oil
    2 tsp soy sauce
    1 tsp ground ginger
    1/2 tsp salt
    1/8 tsp black pepper

    1. Combine your dressing ingredients in a mason jar and shake until well blended (it will be thin, you can add a little more oil if you'd like a thicker texture, but I didn't mind the thin texture.) Taste, and adjust the seasonings if desired. Set aside / refrigerate until ready to use.
    2. Assemble the salad on individual plates or a large platter - romaine, cabbage, mandarin oranges, cashews, grated carrots. Top with sliced chicken and sprinkle with sesame seeds.
    3. Drizzle with your preferred amount of dressing (shake the dressing up again before pouring), and enjoy!

  1. Looks so colorful, delicious, love the sesame on it.

  4. Okay. Yum! Can I have this for breakfast? Please.

  5. Wow what a gorgeous and colorful salad. I'm kind of obsessed now and love the crunchy noodles, nuts, and seeds.

  6. What a colorful salad, perfect as a meal. Its got the crunch, the sweetness and slight spiciness.

  7. Very inviting plate of salad this is with the essential proteins.
