Feta and Tomato Pasta


Of course, like many others, I have heard about the now famous "TikTok Pasta" and decided to give a version of it a try at home. 


I had about 6 large roma tomatoes that I used, along with some fresh spinach mixed in towards the end. I made this dish even simpler by using Greek Vinaigrette as the main oil / seasoning component. 


The tomato and cheese bake up so very creamy. The roma tomatoes give off plenty of moisture so I didn't really need to thin mine with pasta water at all. 


My family loved this dish, and I loved how easy and creamy and full of veggies it was! Also - YUMM the house smells good on that last 10 minutes when the garlic gets added in!!


Feta and Tomato Pasta

Ingredients
1 8-oz block feta cheese
6 large roma tomatoes, diced
1/3 cup of Greek Vinaigrette dressing
1 TBS minced garlic 
4 cups fresh spinach
salt and pepper, to taste
6-oz bow tie pasta

Directions
  1. Preheat oven to 400 degrees. Spread tomatoes in a 9x13 baking dish and coat with the vinaigrette. Mix gently to evenly combine. Settle the feta cheese in the middle, flipping once so both sides are coated with the dressing.
  2. Bake in the preheated oven for 30 minutes.
  3. Remove dish from the oven and stir in the fresh spinach gently until everything begins to combine and the spinach starts to wilt. Sprinkle the garlic over the top and return to the oven for 10 minutes.
  4. Meanwhile, heat a large pot of salted water to a boil. Cook the pasta to your preferred level of doneness and drain - reserve about 1/2 cup of pasta water in case you need it to thin the sauce.
  5. When tomato mixture has finished baking, stir and taste test. Add some salt and pepper, to taste, if desired.
  6. Stir in the cooked pasta, and if the sauce needs a little extra moisture add some of the reserved pasta water.
  7. Serve immediately.
