Pizza Cupcakes


If you love variations of pizza as much as we do around here, you might also be looking for fun new tasty ways to enjoy and share those flavors with your family! And these easy, biscuity muffins are a fabulous base to play with. Mix and match your favorite pizza add-ins and you'll have handheld pizza flavored bites in no time.


You can sprinkle on additional cheese and pepperoni at the end of baking if you want them to have a little more "visual appeal" as well. Serve these tasty muffins up with some warmed spaghetti / pizza sauce and you'll have a perfect little appetizer, lunch, or snack!


Pizza Cupcakes

Ingredients
1 1/2 cups all-purpose flour
1 TBS white sugar
1 tsp salt
1 tsp garlic powder
1 tsp Italian seasoning
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup + 2 TBS milk
1-2 oz diced pepperoni
1 cup shredded mozzarella cheese
1/2 cup pizza / spaghetti sauce for serving (optional)

Directions
  1. Preheat oven to 400 degrees. Spray 9 wells in a cupcake tin with non-stick cooking spray, or line with paper liners (spray the liners with nonstick cooking spray).
  2. Mix dry ingredients together in a medium bowl: flour, sugar, salt, garlic powder, Italian seasoning, and baking powder. Whisk to combine and make a well in the center.
  3. Add the egg, milk, and oil to the well and whisk them gently together to blend before using a fork or spatula to incorporate the wet ingredients into the dry. Stir the pepperoni and mozzarella cheese into the sticky batter.
  4. Divide the batter among the prepared muffin tin. Bake 13-15 minutes, until lightly browned and bake through. Cool in pan for a minute or two, then move to a cooling rack. Serve warm with spaghetti / pizza sauce for dipping if desired.
