You can sprinkle on additional cheese and pepperoni at the end of baking if you want them to have a little more "visual appeal" as well. Serve these tasty muffins up with some warmed spaghetti / pizza sauce and you'll have a perfect little appetizer, lunch, or snack!
1 1/2 cups all-purpose flour
1 TBS white sugar
1 tsp salt
1 tsp garlic powder
1 tsp Italian seasoning
2 tsp baking powder
1/3 cup vegetable oil
1/3 cup + 2 TBS milk
1-2 oz diced pepperoni
1 cup shredded mozzarella cheese
1/2 cup pizza / spaghetti sauce for serving (optional)
- Preheat oven to 400 degrees. Spray 9 wells in a cupcake tin with non-stick cooking spray, or line with paper liners (spray the liners with nonstick cooking spray).
- Mix dry ingredients together in a medium bowl: flour, sugar, salt, garlic powder, Italian seasoning, and baking powder. Whisk to combine and make a well in the center.
- Add the egg, milk, and oil to the well and whisk them gently together to blend before using a fork or spatula to incorporate the wet ingredients into the dry. Stir the pepperoni and mozzarella cheese into the sticky batter.
- Divide the batter among the prepared muffin tin. Bake 13-15 minutes, until lightly browned and bake through. Cool in pan for a minute or two, then move to a cooling rack. Serve warm with spaghetti / pizza sauce for dipping if desired.
