Gingery BBQ Chicken
I recently purchased a 2-liter bottle of Ginger Beer for a baking project - and then I needed to figure out what to do with the rest of it! I'd never had ginger beer before - but it worked so well on poached pears and really infused a great, strong ginger flavor so we were brainstorming about what else it could be used for. I love a good soda infused BBQ recipe - I have a root beer version here. I was thinking a gingery BBQ chicken might go really well together, so we gave it a try! And I am here to say, we all approved.
If you happen to have leftover ginger beer in your house, don't be afraid to pull out the crock pot and dump it over some chicken breasts. The results are tangy, gingery, and perfect for all of your pulled chicken needs. We like to serve ours over baked potatoes with a little melted cheese or sour cream, on sandwich buns, and over rice!
Gingery BBQ Chicken
Ingredients
3-4 lbs boneless skinless chicken breasts
2 medium onions, diced
~ 4 cups ginger beer
1 bottle sweet baby ray's BBQ sauce
Directions
- Place chicken and diced onions in your slow cooker. Pour enough ginger beer over the chicken to cover.
- Cook on low for about 8 hours, or high for about 4-6, until chicken will shred easily. Drain off excess liquid, shred the chicken and then toss with the bottle of BBQ sauce (to your preferred taste and "sauciness")!
- Serve however you enjoy BBQ chicken - we love this on baked potatoes, sandwiches, over rice, etc.
