For today's posts - we are sharing fantastic Breakfast for Dinner ideas! This one is right up my alley. My family loves breakfast for dinner - sometimes it will be a sweet craving and we'll whip up french toast or pancakes, other times it's easy egg sandwiches, often you'll find me fixing half of a bagel with cream cheese and a fried egg as my evening go-to on a busy, hungry kind of night. Breakfast dishes are often quick, contain ingredients you usually keep stocked in your pantry and refrigerator, and are a fun change of pace!
We grew up eating breakfast burritos - let me confirm they looked absolutely nothing like the one I'm sharing with you today. My sister and I joke about how little filling was in each, then they were rolled up and a half piece of "plastic" (aka the knock off of Kraft single slices) was layed over the top, and they were toasted up in the oven before serving. Sometimes with salsa or ketchup to dip them in. We do love the mexican flavor profile, and that is the main thing we've carried over with our version! In addition to being packed with cheesy ham eggs, and strips of crispy bacon, we add in some fresh tomatoes, avocado, a drizzle of salsa, and a touch of sour cream to finish these off. You can mix and match your favorite toppings to your personal preference - or leave them off and enjoy cheesy eggs and bacon! That's the beauty of a breakfast for dinner option like this - each person can fix them exactly the way they want them.

Cheesy Bacon Breakfast Burrito adapted from Delish
Ingredients
8 slices bacon
8 large eggs
2/3 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 cup shredded cheddar
4 slices ham lunch meat, diced into bite sized pieces
4 large flour tortillas
1 ripe avocado, sliced
1/2 cup sliced cherry tomatoes
1/4 cup salsa
2 TBS sour cream

Cheesy Bacon Breakfast Burrito adapted from Delish
Ingredients
8 slices bacon
8 large eggs
2/3 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 cup shredded cheddar
4 slices ham lunch meat, diced into bite sized pieces
4 large flour tortillas
1 ripe avocado, sliced
1/2 cup sliced cherry tomatoes
1/4 cup salsa
2 TBS sour cream
Directions
- Cook the bacon in a large nonstick skillet to your desired crispiness, set aside on paper towels to drain the grease.
- Pour out some of the grease from the skillet - leave about 1 1/2 TBS worth in the skillet.
- Meanwhile, whip the eggs, milk, salt and pepper together in a medium bowl until blended.
- Cook the eggs in the same skillet with the reserved grease, add in the diced ham and the shredded cheese. Stir occasionally until cooked through and to your preferred consistency.
- Remove from heat.
- Warm the tortillas for about 20-30 seconds (all 4 of them together) so they are pliable.
- Assemble the burritos by distributing the eggs and bacon among the tortillas, and topping with a sprinkling of diced avocado, tomato, a little sour cream, and salsa. (Feel free to change up the toppings to your preferred add-ins!)
- Roll carefully and enjoy!
Breakfast burritos are the bomb and this version looks so awesomely amazing!!
