Parmesan Roasted Carrots
This is a great go-to roasted carrot recipe that uses pretty standard ingredients you probably have on hand! The panko breading adds a lovely little extra texture to these carrots and they are a versatile side dish with a mild flavor profile so they will go with just about anything. I served these alongside some chicken thighs a couple nights ago. Well, mostly I taste tested them (repeatedly) off the baking sheet and then served dinner.
You can up the parmesan if you like a stronger flavor profile, and up the breading if you want more of that texture, but this is a great base to play with and a very delicious way to enjoy carrots! Roasting brings out such lovely, sweet flavor in carrots!
Parmesan Roasted Carrots from Cafe Delites
Ingredients
2 pounds carrots, peeled and cut into approximately 1/4ths
2-3 TBS olive oil
1 TBS minced garlic
1/4 cup grated parmesan cheese
2 TBS Panko bread crumbs
Salt and pepper, to taste
Directions
- Preheat oven to 400 degrees.
- Place carrots on a baking sheet and add all other ingredients. Gently toss to combine, then spread out for even cooking.
- Bake 20-25 minutes or until they reach your desired level of tenderness. Taste and adjust seasonings if needed.
- Toss once more before serving.
