For today's event, Sneha from Sneha's Recipes invited us to make soups with oats! This was completely new for me - I've never incorporated oats into anything savory (besides as an occasional binder in something like meatloaf)! I enjoyed doing a little research on the types of dishes that popped up when I ran a search, and settled on this Vegetable Oats Soup. It was a small serving size which works well for recipe testing in my kitchen, especially with something "new" that may or may not go over well with my sometimes opinionated eaters. 

This recipe incorporates a little bit of ginger, garlic, and some Italian seasoning. I have to admit the flavor profile kind of threw me and my sister who did the taste testing on this one. I actually liked the way it came out - especially the texture - but the touch of Italian seasoning with an oatmeal textured soup just all around kind of threw me. I kept trying to figure out if different seasonings would have made me feel any different, and I'm really not sure. I really did enjoy the texture of this dish, but I might swap the Italian seasonings for something like cumin and try again another time out of curiosity! You can use pretty much any vegetables in this - I used a frozen veggie soup / gumbo mix and some homemade vegetable broth I had in the refrigerator. Love recipes that are super flexible like this one!

Vegetable Oats Soup

Ingredients
1 TBS butter
1 tsp minced garlic (jarred)
1/4 cup quick oats
2 cups vegetable broth
1/2 tsp ginger
1/4 tsp Italian seasoning (optional)
1/4 tsp salt

Directions
  1. Heat the butter in a medium saucepan oven medium to medium high heat. When melted, add the minced garlic and cook for about a minute until fragrant. 
  2. Stir the oats into the garlic butter and cook another minute. 
  3. Add all remaining ingredients and stir, bring to a simmer and allow the oats to thicken for about 5-10 minutes, until your preferred texture is reached. 
  4. You can thin with additional water / broth if needed, or cook longer if you want it thicker.
  5. Taste and adjust seasonings as desired.
