Lamb Pita Sandwiches with Tzatziki
Do you love gyros as much as I do? I am slightly obsessed with Greek flavors. I used to have a Greek chicken salad for lunch at work probably at least once a week (you know, back before Coronavirus and working from home for the past few months!) I might need to re-institute my Greek salads for lunch at home - I miss them!
When I saw this recipe on Hezzi D's website I knew I needed to give it a try. The tzatziki sauce was really delicious - and you can tweak the seasonings to your preferences. The patties are flavorful and these make for a perfectly filling meal. I love the combination of textures, flavors, and temperatures! There's something about cool crisp veggies, a creamy sauce, and a piping hot juicy patty that just goes together so very well.
Lamb Pita Sandwiches with Tzatziki
For Tzatziki Sauce
1 cup plain Greek yogurt
1/2 cucumber, finely chopped
1 tsp salt
1/2 tsp black pepper
1 TBS lemon juice
1 TBS minced garlic (jarred)
1/2 tsp dill
1 tsp oregano
For Lamb Patties
1/4 cup diced pita bread / bread crumbs
1/2 small onion, chopped
1 TBS lemon juice
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1 TBS minced garlic (jarred)
1 lb. ground lamb
Toppings
4 (8 inch) pitas
shredded lettuce
diced tomato
feta cheese
Directions
- Combine your tzatziki sauce ingredients in a small bowl or sealable container and refrigerate until ready to use.
- When ready to make your dish, combine your lamb patty ingredients together and shape into about 4-6 log shaped patties, flattened slightly (whatever size you need to make to fit in the pitas you bought).
- Fry these up for about 3 minutes per side in a large nonstick skillet, with a little bit of nonstick cooking spray / oil in the bottom if needed. When cooked through move them to some paper towels to drain.
- Serve these up with 1 patty, some lettuce, diced tomato, a sprinkle of feta and a generous dollop of the prepped tzatziki sauce! Adjust toppings as desired.
