Chicken Caesar Salad Wraps for #LunchInspiration
Liz with the #FestiveFoodies invited us to share some tasty lunch ideas - sometimes it's easy to get stuck in a rut, or just default to convenience food for that mid-day meal!
I cooked up about a pound of chicken in the Crock Pot the morning I wanted to make these yummy sandwiches - just throw however much boneless skinless chicken breasts (or thighs) in your crock pot with enough chicken broth (or water, but I prefer broth) to cover the bottom of the pot. Set to high heat, and about 3-4 hours later you should have easily shreddable chicken which works beautifully in recipes like this one!
Same for the croutons - I don't keep them stocked, so I pulled a couple homemade rolls out of the freezer to thaw. Once thawed, slice into cubes, arrange on a baking sheet, toss with some olive or vegetable oil and a sprinkling of salt, pepper, and garlic powder and bake in a 375 degree oven for about 15-18 minutes total, tossing them half way through cooking and keeping an eye on them towards the end. Golden brown and crisp is perfection!
Chicken Caesar Salad Wraps
Makes 1 wrap
Ingredients
1 cup chopped romaine lettuce
1 slice thick cut bacon, cooked and crumbled
1/2 cup cooked, shredded chicken
1-2 Tablespoons Caesar dressing
1 Tablespoon shredded Parmesan cheese
1/4 cup croutons
1 large flour tortilla
Directions
- In a medium sized bowl, combine your filling ingredients: lettuce, bacon, shredded chicken, dressing, Parmesan cheese and the croutons. Toss gently to combine and evenly coat in the dressing. Adjust the dressing to your personal preference (for me - 1 to 1 1/2 TBS is about right)!
- Warm tortilla in the microwave for about 15 seconds to make it more pliable.
- Lay filling ingredients down the center, and roll your wrap up! Enjoy!
