Creamy Garlic Parmesan Brussels Sprouts
This was such a delicious side dish! If you are looking for new ways to serve up brussels sprouts (especially if you have people in your house who aren't huge fans of brussels - gasp!) try this one out! They are tender, oh so creamy, cheesy, and hello bacon!
The ingredients blend beautifully together in a decadent and delicious side dish. We served these alongside some roasted chicken legs for a very tasty dinner.
I am a huge fan of brussels - I will never get tired of them, and I can eat them the same way over and over (we typically just roast them in the oven with a little olive oil, salt and pepper) - but I also love taking my favorite veggies and finding new ways to serve them up! New flavor profiles to complement the other components in the meal, new ways to present a vegetable for my family to taste test and decide if they like it better than other versions!
Creamy Garlic Parmesan Brussels Sprouts
Ingredients
10 ounces bacon
2 TBS butter
2 lbs Brussels sprouts, rinsed and trim off the bottoms, and cut in half or quarter if very large
1/2 tsp salt, more to taste
1/4 tsp black pepper, more to taste
1 TBS minced garlic (jarred)
3/4 - 1 cup heavy whipping cream
1/4 cup grated parmesan cheese
1/3 cup shredded mozzarella
Directions
- Preheat oven to 375 degrees.
- In a large, oven proof skillet or dutch oven, cook the bacon over medium to medium-high heat. Set cooked bacon aside to drain on paper towels and cool.
- Drain off all but about 1-2 TBS of bacon grease, add in the butter, and then saute the brussels in the grease and butter; season with the salt and pepper. Stir occasionally. Cook about 5-6 minutes, scraping the browned bits off the bottom of the pot as you stir. When brussels have some good browned / caramelized sides, add in the garlic and cook another minute.
- Chop the cooled, cooked bacon and add it back into the pot along with the whipping cream - stirring to combine and allowing flavors to meld for about 2-3 minutes. Stir in the parmesan cheese, sprinkle with the mozzarella and place the skillet / dutch oven into the pre-heated oven for about 10 minutes (until cooked to your desired texture).
