I am obsessed with this sandwich!! It's so simple, and makes the most perfect quick lunch or dinner on a busy day but wow just the combination of those classic ingredients in this toasty, melty sandwich are absolute perfection.

I pulled the fresh basil leaves out of my little fledgling garden - what a treat to be able to pull one of your very favorite ingredients out of your own backyard! I don't know why I waited so long to plant a few small things. Fresh basil has always been a favorite of mine - but there have been plenty of times I've had a hard time finding it at the grocery store. My plants are still pretty little, but I was definitely able to get enough for this fresh and tasty sandwich.

  • Turkey Bruschetta Panini
    makes 1 sandwich

    Ingredients
    2 slices sourdough bread
    ~ 1 Tablespoon mayonnaise
    4 slices turkey lunch meat (I used mesquite - use pretty much whatever flavor you'd like)
    2-3 thin slices of tomato
    4-5 fresh basil leaves
    1 1/2 - 2 ounces of sliced mozzarella cheese

    Directions

    1. Preheat your griddler over high heat (or prepare a large nonstick skillet over medium to medium-high heat).
    2. Divide the mayonnaise between the 2 slices of bread, then flip the mayonnaise side down on the cutting board (this is the outside of your sandwich). 
    3. Assemble the sandwich by laying down the turkey slices on one of the bread pieces, covering with the basil leaves, thinly sliced tomatoes, and topping with the cheese. Add the top piece of bread, mayonnaise side facing out. 
    4. Place the sandwich in the preheated griddler and set for 3 minutes, or cook in the preheated skillet for about 3 minutes per side - watch the temperature. Cook until golden brown and cheese has melted.
    5. Enjoy!

  3. There is nothing better than fresh basil on all the things in summer. Kudos on discovering the joys of gardening. And the combination of turkey mozzarella and tomato is one of my favorites too.
