Turkey Cobb Salad


I love a big beautiful salad as often as I can justify the work to prep the ingredients! We had some leftover turkey cooked up and I thought a fresh and tasty salad might be a great way to use up a little bit of it.

This cobb salad is delicious and filling, and easy to mix and match the topping ingredients based on your personal preferences and tastes - or just what's in the fridge! I meant to add some chopped cucumber too, but I forgot about it (obviously)! Change up the cheese or dressing as preferred.


Is there anything as pretty as these rows of ingredients lined up and ready to enjoy? Such a beautiful salad! Sprinkle with some sunflower seeds or croutons if you want a little more crunch!


Turkey Cobb Salad adapted from Countryside Cravings
makes 1 salad

Ingredients
2 cups chopped romaine or iceberg lettuce
1/4 - 1/3 cup chopped cooked turkey
2 slices bacon, cooked and crumbled
1 hard boiled egg, chopped
1/2 a small avocado, diced
5-6 cherry tomatoes, halved or quartered
2 - 3 TBS crumbled blue cheese
Ranch dressing, to taste

Directions
  1. Place greens on a plate, and then create lines with each ingredient over the lettuce. Drizzle with dressing, and enjoy!
