6/22/20 ~ Weekly Meal Plan

Here we are at the weekend again! It's been another busy week - a little bit of cooking each day to meet a few blogging deadlines so we got through most everything on the plan from last week.

I have had a jar of lemon curd in my cabinet for a few months now - we picked it up when we rode the Blue Ridge Scenic Railway. The ride goes through the Chattahoochee National Forest and stops for a 2-hour layover in McCaysville, Georgia and Copperhill, Tennessee, right on the state line. We had a quick lunch at a little pizza place and did some shopping at the little boutiques. We picked up some unique pasta and a jar of lemon curd at one of the shops and I've been dying to crack it open ever since! I cannot WAIT to make the no churn ice cream I have on the menu this week!
