Peanut Butter Banana Baked Oatmeal for #BakingBloggers

Today I'm sharing this incredibly delicious baked oatmeal studded with peanut butter banana flavor. It was a wonderful breakfast that was devoured very quickly in my house - I think we had one serving leftover after the first time we ate it, and that disappeared the next morning. I love how baked oatmeal really tastes like a big soft oatmeal cookie. So tender, a little bit cake like, and flavored however you'd like. This peanut butter banana version was soooo good! I loved how the flavors blended together and resulted in this tasty treat that we will definitely enjoy again soon.

Peanut Butter Banana Baked Oatmeal

Ingredients
1 ½ cups old fashioned oats
1 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
2 overripe bananas mashed
1 large egg
¼ cup creamy peanut butter
1 tsp vanilla extract
¼ cup pure maple syrup
¾ cup almond milk unsweetened (I used vanilla flavored)

Directions
  1. Preheat the oven to 350 degrees. Spray a 9x9 baking dish with cooking spray and set aside.
  2. Combine the dry ingredients in a medium bowl: oats, baking powder, salt, and cinnamon. Whisk to blend, and set aside.
  3. Combine the bananas with the egg in the bowl of a stand mixer and blend until they come together. Add in the peanut butter and blend until smooth. Add in the vanilla, maple syrup, and almond milk. Blend again until well combined.
  4. Add the dry ingredients into the wet and mix just to evenly combine.
  5. Pour batter into the prepared baking dish.
  6. Bake in the preheated oven 35-45 minutes, until the edges are golden and beginning to pull away from the pan (it may not appear fully set in the middle, as long as the edges are browned it is baked through).
  7. Allow to rest 10 minutes, then serve hot, or room temp. You can even cut into bars, chill, and eat cold!

    1. Maybe if you refrigerated first and they firmed up, but I definitely wouldn't call them "bar" material! They were pretty soft!!
