Meal Plan Week of June 13th

This week is going to be... different than usual! Hubby and I are going to try out the Cabbage Soup Diet. I know Kenneth has been struggling with not being able to work out right now as he's healing and I know I would feel better if I lost a couple pounds which generally seem to creep on when cycling for the surrogacy and on all the different hormones. I figured it would be a good "cleanse" week - not have to really think about what to make for a week, just eat lots of good fresh fruits and veggies and see how we feel at the end of the week!

I stocked up at Sam's Club for the fresh veggies and fruit - I LOVE being able to get fresh ingredients there - it always amazes me how MUCH I can get for a great value! I got a 10-lb bag of oranges, a large carton of strawberries, a bag of nectarines, a 3-lb bunch of bananas, a 5-lb bag of onions, large bag of celery, large container of organic baby spinach, large carton of mushrooms, 6-pack of mixed color bell peppers, big container of roma tomatoes, large bag of coleslaw mix (which I'm going to use instead of a head of cabbage in the soup), and also some frozen green beans and broccoli. I had everything else already at home. I'm not 100% clear on how little "seasonings" you're "allowed" to use, but I think the idea is spices are ok, but as little salt as possible and LOTS of fluids. So, I'm going to give it a try and see how it goes! Since this isn't a limited diet in terms of how much you can eat and it's only for 1 week I think it should go just fine; it would be nice to be down a couple pounds at the end of the week but mostly I just hope to feel good physically after eating mainly fruits and veggies for the week!

So the plan is:

Day One (Monday)
Fruit: Eat all of the fruit you want (except bananas). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water.
(Suggestions: Strawberries, nectarines, apple, oranges, grapes)

Day Two (Tuesday)
Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup. At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today.
(Suggestions: Raw baby carrots, steamed spinach, salad w/ small amount of dressing, steamed broccoli, green beans)

Day Three (Wednesday)
Mix Days One and Two: Eat all the soup, fruits and vegetables you want. No Baked Potato.
(Suggestions: Strawberries, apple, oranges, grapes, baby carrots, steamed spinach, salad w/ small amount of dressing, steamed broccoli, green beans)

Day Four (Thursday)
Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses of skim milk as you would like on this day, along with your soup. This day is supposed to lessen your desire for sweets.
(Suggestions: Bunch of bananas, ½ gallon skim milk)

Day Five (Friday)
Beef And Tomatoes: Ten to twenty ounces of beef and up to six fresh tomatoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body. Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer, you can substitute broiled fish for the beef one of the beef days (but not both).
(Suggestions: Grilled Steak with fresh tomatoes; pan-seared steak with sauteed diced tomatoes and seasonings)

Day Six (Saturday)
Beef and Vegetables: Eat to your heart’s content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables. No Baked Potato. Eat your soup at least once.
(Suggestions: Grilled Steak, baby carrots, steamed spinach, salad w/ small amount of dressing, steamed broccoli, green beans)

Day Seven (Sunday)
Brown rice, unsweetened fruit juices and vegetables: Again stuff, stuff, stuff yourself. Be sure to eat your soup at least once this day.
(Suggestions: Steamed brown rice cooked with chicken broth, baby carrots, steamed spinach, salad w/ small amount of dressing, steamed broccoli, green beans)

Cabbage Soup Recipe

6 large green onions (also called “spring” onions)
2 green peppers
1 or 2 cans of tomatoes (diced or whole)
3 carrots
1 container (10 oz. or so) mushrooms
1 bunch of celery
half a head of cabbage
1 package spice only soup mix (Lipton’s is a good choice)
1 or 2 cubes of bouillon (optional)
1 48oz can V8 juice (optional)
Season to taste with pepper, parsley, curry, garlic powder, etc. (Little to NO SALT!)

Slice green onions, put in a pot on medium heat and start to sauté with cooking spray. Do this until the onions are whiter/clearer in color (about 4-6 minutes).

Cut green pepper stem end off, then cut pepper in half to take out the seeds and membrane. Cut the green pepper into bite size pieces and add to pot.

Take the outer leafs layers off the cabbage, cut into bite size pieces, add to pot.

Clean carrots, mushrooms, and celery, cut into bite size pieces and toss them in. Add tomatoes now, too.

If you would like a spicy soup, add a small amount of curry or cayenne pepper now.

For seasonings, you can use a spice soup packet of your choice (no noodles!) or use beef or chicken bouillon cubes. These cubes are optional, and you can add spices you like instead (make sure not to add much salt, if any at all).

Use about 12 cups of water (or 8 cups and the 48 oz of V8 juice), cover and put heat on low. Let soup simmer for a long time – about 2 hours or until vegetables are tender.
