Instant Pot Sticky Rice


We have a wonderful Laotian event coming up for #eattheworld in a couple more days and as part of the meal I prepared this easy, and super tasty sticky rice. The Instant Pot makes this dish even easier! Give your rice time to soak, and otherwise it's just dump and push a button a couple times and voila. 


This was wonderful for a change of pace from your traditional rice, it's just so tasty with a little bit of sweetness and a whole lot of sticky creaminess. I could definitely eat just a bowl of this by itself for a little afternoon treat anytime!


Instant Pot Sticky Rice

Ingredients
1 cup white rice
1 cup water (plus extra for soaking)
1 can (12-14 oz) coconut milk
1/4 - 1/2 cup granulated sugar

Directions

  1. Place rice in a bowl and rinse a few times until the water runs clear (or mostly clear).
  2. Add fresh water, to cover the rice, and allow rice to soak at least 6 hours.
  3. When ready to cook, drain off the water and scrape the rice into the instant pot and add 1 cup of water to the pot.
  4. Choose the "rice" button and allow the rice to cook. 
  5. When cycle is complete, quick release the steam and stir to fluff. Add in the coconut milk and your desired amount of sugar (1/4 cup was what we used for a lightly sweet rice, if you like it noticeably sweet use the 1/2 cup amount). Stir to combine, and set the Instant Pot to saute. Bring the mixture to a low simmer and stir for about 2-3 minutes until some of the liquid has absorbed. Then turn the Instant Pot on, replace the lid and just allow it to rest it for a few minutes.
  6. Stir to blend before serving (the liquid should all be absorbed, and you should have a lovely sticky rice).
