Instant Pot Sticky Rice
We have a wonderful Laotian event coming up for #eattheworld in a couple more days and as part of the meal I prepared this easy, and super tasty sticky rice. The Instant Pot makes this dish even easier! Give your rice time to soak, and otherwise it's just dump and push a button a couple times and voila.
This was wonderful for a change of pace from your traditional rice, it's just so tasty with a little bit of sweetness and a whole lot of sticky creaminess. I could definitely eat just a bowl of this by itself for a little afternoon treat anytime!
Instant Pot Sticky Rice
Ingredients

1 cup white rice
1 cup water (plus extra for soaking)
1 can (12-14 oz) coconut milk
1/4 - 1/2 cup granulated sugar
Directions
- Place rice in a bowl and rinse a few times until the water runs clear (or mostly clear).
- Add fresh water, to cover the rice, and allow rice to soak at least 6 hours.
- When ready to cook, drain off the water and scrape the rice into the instant pot and add 1 cup of water to the pot.
- Choose the "rice" button and allow the rice to cook.
- When cycle is complete, quick release the steam and stir to fluff. Add in the coconut milk and your desired amount of sugar (1/4 cup was what we used for a lightly sweet rice, if you like it noticeably sweet use the 1/2 cup amount). Stir to combine, and set the Instant Pot to saute. Bring the mixture to a low simmer and stir for about 2-3 minutes until some of the liquid has absorbed. Then turn the Instant Pot on, replace the lid and just allow it to rest it for a few minutes.
- Stir to blend before serving (the liquid should all be absorbed, and you should have a lovely sticky rice).
