If you love a traditional roast chicken every now and then for a delicious cozy and comforting meal, this is a definite keeper. The chicken is just so very moist and tender, and the flavor from all those wonderful seasonings and the oil / butter mixture is perfection. This was an absolutely delicious dinner! 

Serve your roast chicken up with some mashed potatoes, and homemade gravy from the pan drippings if you like. This goes well with some simple steamed veggies as well, since it's already got so much great flavor!

Oven Roasted Recipes


Garlic Herb Butter Roast Chicken 

Ingredients
4 pound (2kg) whole chicken, at room temperature giblets and neck removed from cavity
1/4 cup unsalted butter, melted
3 Tablespoons olive oil
1/4 cup white wine
2 TBS lemon juice
Salt and freshly ground pepper, to taste
2 Tablespoons fresh chopped parsley
1 heaping Tablespoon minced garlic (jarred)
2 - 3 tsp dried rosemary

Directions
  1. Preheat oven to 430 degrees. Have a roasting pan ready.
  2. After you've prepped the chicken, place it in the roasting pan insert.
  3. In a medium bowl, combine the butter, olive oil, white wine, lemon juice, parsley, minced garlic, and rosemary. Whisk to blend.
  4. Generously season the chicken with salt and pepper, rubbing into the skin. Then gently pour the prepared butter / seasoning mixture all over and inside the bird, rubbing everything in.
  5. Ensure chicken is positioned breast side up before placing in the oven. Roast for 1 hour 20 minutes, basting at the half way mark, or until juices run clear. Once cooked through, baste once more and return to oven under broil for 2-3 minutes, or until skin is golden brown and crisp. 
  6. Allow to rest 10-15 minutes before slicing and serving.
