BBQ Chicken Sheet Pan Dinner


This was such a tasty meal I made recently! I loved the smoky flavor of the barbecue sauce, and the combination of potatoes with the chicken and green beans. It was a wonderful filling meal - perfect for a busy day. I love sheet pan meals! Throw all your components together and dinner comes together in no time. Great balance, great flavor, easy clean up!


BBQ Chicken Sheet Pan Dinner

Ingredients

Marinade
2/3 cup ketchup
1 TBS light brown sugar 
1 TBS apple cider vinegar
1 TBS Worcestershire sauce
1 tsp ground cumin
1 tsp paprika
1 TBS minced garlic (jarred)
Kosher salt and freshly ground black pepper

Other Ingredients
1 1/2 lbs boneless skinless chicken breast
6 medium potatoes, scrubbed and evenly diced small
1 lb green beans, ends trimmed

Directions
  1. Combine marinade ingredients in a large resealable container (ziploc or tupperware). Cut chicken into approximately 4 or 5-oz portioned sized pieces and add to the marinade. Allow to marinate for at least 3-4 hours before proceeding with recipe.
  2. Preheat oven to 350 degrees. Line 2 baking sheets with foil and spray with nonstick cooking spray.
  3. Place diced potatoes on the baking sheet and sprinkle generously with salt, pepper, and a light drizzle of olive oil. Toss to coat and bake about 20 minutes in the preheated oven.
  4. Remove and add the chicken pieces to the sheet pan - spread to second sheet if necessary. Scrape out and spread any marinade from the tupperware over the chicken and dot the potatoes with it as well. 
  5. Return sheet(s) to oven and bake about 25 minutes.
  6. Remove and add the green beans. Drizzle beans with a little olive oil and season generously with salt and pepper. Toss potatoes gently.
  7. Return to oven until green beans and potatoes are cooked through - 25 more minutes. 
  8. If your chicken pieces are cooking too quickly, remove them from the baking sheets once they are cooked through and keep warm on a plate covered with foil until the potatoes and green beans are ready.
