12 Cookies for Christmas
I was recently going through my AllRecipes Recipe Box looking for inspiration and ideas for a cookie recipe - and I was looking through just how MANY recipes I've saved and never baked, and some that I have baked but never shared on the blog before! So I sorted them by rating and made a list of 12 cookies. My goal is to make all of these before Christmas and share them here - 12 cookies for Christmas! I guarantee you my boys won't complain about this one. Butter and sugar - look out, here I come! I haven't ever really met a cookie I didn't like. I do prefer soft cookies to crisp ones, but love all sorts of flavors and textures overall, and love getting to try out new recipes to see if we can find a new family favorite for the collection!
As you can see from the recipes I have saved in my Recipe Box and shared below, I am on the never-ending quest for the PERFECT chocolate chip cookie... Of course they are usually all pretty perfect in their own way, so maybe I just want to eat my way through all of them...

Ingredients
1 cup
butter, softened
1 1/2 cups
white sugar
2 eggs
2 teaspoons
vanilla extract
2 cups
all-purpose flour
2/3 cup
cocoa powder
3/4 teaspoon
baking soda
1/4 teaspoon
salt
2 cups
semisweet chocolate chips
1/2 cup
chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
- Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

- Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.
- Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.
- Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Now I just need to make some hot chocolate and spiced apple cider to go with them all! :)
