#FoodieExtravaganza - Reese's Krispies Popcorn

Now let me tell you all about this peanut buttery, chewy, chocolaty, crunchy treat! I made this the day after Halloween, and it is a GREAT way to use up some of those extra Reese's peanut butter treats you have laying around the house... or a good excuse to go out and buy a bag! This would be perfect to serve up at a get together or party, pack in baggies or ziplocs to take with school lunch, or snack on as a sweet treat after school or for dessert. Lots of ways to enjoy this yummy recipe!
The sugary, peanut buttery coating is pretty warm when you add in the candies, so they mostly melt right into it, leaving you with an occasional candy chunk, but mostly melty chocolaty pieces that add another layer of sweetness over the peanut butter layer. This is a rich and delicious treat for peanut butter and chocolate lovers! The addition of the rice krispies is for some extra "crunch" - I don't even notice them unless I'm really looking for them though - just a little something else for additional texture.
Reese's Krispies Popcorn slightly adapted from Oh Sweet Basil
Ingredients
1 cup peanut butter
1 cup light corn syrup
1 cup sugar
1/3 cup popcorn kernels
1 cup rice krispies cereal
1/4 cup chocolate chips
1 cup chopped assorted Reese's Peanut Butter Cups, FastBreak bars, and Reese's Pieces
Directions
- In an air popper, pop popcorn kernels into a very large bowl. When all kernels have popped, add in the cereal.
- In a medium saucepan over medium heat, combine the light corn syrup and sugar. Stir occasionally and continue cooking until the syrup mixture is clear and sugar has fully dissolved. Add in the peanut butter and continue stirring until well blended and smooth. Remove from heat.
- Pour peanut butter mixture over popcorn / cereal combination and fold gently with a wooden spoon to evenly distribute the syrup. Add in the chopped candies and the chocolate chips and fold several more times, or until well combined.
- Lay out the warm popcorn onto parchment paper to cool. Store in Ziploc bags or an airtight container once cooled.

ReplyDeleteThank you Lauren - it definitely is; and there are so many variations you could do with this to compliment other candy bars. I was already thinking snickers would be a perfect candy add-in with the peanut butter base, and rolos, mars, etc. with a caramel base... mmmm....

My husband is a huge popcorn lover. This sounds right up his alley! Great idea to use up the leftover Halloween candy, too.
