Cheesy Sheet Pan Hash Browns
Happy almost summer!! Like seriously - how is it the first week of June already?! My birthday is in a WEEK!! WHAT?!
We're going to do a local cabin for a week with the family just to take a break from the day to day at home - and the never ending chores and cleaning and organizing there is to be done, but my sister and I will still be working remotely while we're away. Such a strange time in life, the way things have morphed into each other and overlap in a way they never used to. I'm so curious to see what the coming fall and winter will bring as work introduces "return to work" in some capacity.
And in the mean time - let me share some deliciously cheesy, easy sheet pan hash browns! A bag of frozen hash browns (thawed or from frozen) are combined with a few other ingredients and spread out on a baking sheet and that's all there is to it! Cut this into wedges and serve it alongside your favorite breakfast ingredients. Those crispy edges are the BEST!!
Ingredients
30 ounces frozen shredded hash brown potatoes (thawed or from frozen, see note)
1/2 cup butter, melted
2 large eggs, whisked
1 cup shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Directions
- Preheat the oven to 400 degrees, and spray a large nonstick baking sheet with cooking spray (if you're worried about the hash browns sticking, feel free to line your baking tray with parchment paper).
- In a large bowl, dump the frozen hash browns.
- In a small bowl, whisk together the eggs, salt, pepper, and garlic powder.
- Pour the egg mixture over the potatoes and stir gently to combine as best you can.
- Next, stir in the shredded cheddar cheese until evenly distributed.
- Lastly, pour the melted butter all over the hash browns and stir gently to coat (if the hash browns are still frozen, the butter will chill and set quickly).
- Spread the hash brown mixture evenly and thinly on the baking sheet.
- Bake in the preheated oven for 40 minutes, or until hash browns are browned and crispy all the way around and cheese is melted.
