So this is about the easiest way to bake up a loaf of "cram all your breakfast favorites into one easy to hold container" bread you will probably find! There are several steps in preparing each of the components, but once that's done - you roll out some thawed bread dough (or make your own) and fill it up with all the ingredients, roll it up and bake.
This bread is crammed with two types of cheese, tater tots, hard boiled eggs and bacon!! It is easy and delicious - and it keeps in the fridge well. It's good warm or cold, and it's portable! The ingredients actually hold together well enough in the baked bread. You could easily take this as a grab and go breakfast option. It's hearty and a fun twist on breakfast!
This has no added seasoning, so you could definitely add a sprinkling of salt / pepper / garlic powder / red chili flakes, etc. depending on what you were in the mood for. Mix and match the meats as well - add some crumbled sausage, diced ham, etc. You could even use scrambled eggs instead of hard boiled. This one is fun to play around with - it's unique and makes a great breakfast treat!

Breakfast Garbage Bread
Ingredients
2 pounds frozen pizza dough
2 1/2 cups frozen potato tots
8-ounces bacon
5 large eggs, divided use
1 cup grated cheddar cheese
1 cups grated mozzarella cheese
Directions
- Thaw the bread dough per package instructions, when it is thawed and risen, proceed with the steps below.
- Preheat the oven to 425 and bake the tater tots 18-20 minutes, until golden brown. Set aside to cool.
- Meanwhile, pan fry the bacon until crispy. Drain on paper towels, and allow to cool. When cool enough to handle, rough chop the bacon or rip it apart into bite sized pieces.
- Cover the eggs with water in a small to medium pot, over high heat bring the water to a boil and boil for 6 minutes. Drain and add cold water and ice to chill the eggs until they are cool enough to handle. Peel the eggs when they are cool, then quarter.
- Lightly flour the counter, and roll the dough out into a large rectangle (like a cinnamon roll).
- Sprinkle the 2 cheeses all over the dough, leaving about a 1" border.
- Distribute the tater tots, chopped bacon, and quartered egg pieces over the dough. From the small end of the loaf, roll it up gently.
- Place on a baking tray and allow to rest for about 20 minutes.
- Beat the remaining egg, and brush the whole loaf with the egg wash.
- Bake in the 425 degree oven for 40 minutes, or until loaf is golden brown and baked through.
- Allow to cool at least 15 minutes or so before carefully slicing and serving. Bread will hold up better for slicing / serving when cooled.
