Roasted Green Beans


This was a quick and easy side dish that we enjoyed quite a lot! I adore sheet pan roasting vegetables; it adds such great flavor to the vegetables. The bacon lends so much flavor to the green beans, and it all blends together perfectly! I think these green beans would be great for a side dish on Thanksgiving - I'm definitely going to pull this one back out again soon. Green beans are one of those veggies we buy at least monthly, and I'm always looking for new tasty ways to prepare and serve them.

This one is definitely a keeper!


Roasted Green Beans

Ingredients
2 pounds fresh green beans, ends trimmed
8 slices thin bacon, diced small
1 medium onion, finely chopped
1 TBS olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 425 degrees.
  2. Trim ends and rinse green beans. Spread them on a large baking sheet.
  3. Sprinkle diced onion and chopped bacon over, sprinkle with salt and pepper and drizzle with olive oil.
  4. Toss all ingredients gently to evenly combine.
  5. Bake in the pre-heated oven for about 20-30 minutes. Toss them at 20 minutes, and return to oven until the green beans are beginning to brown, and bacon is crisping.
